Did anyone else read the Dr Seuss books as a youngun? Really bizarre and intriguing especially the "Green eggs and ham" that this recipe is inspired by! These are a slimming world friendly, syn free delight for a snack or for lunch, and are delicious hot or cold. Word of advice: Keep them stashed from the men of the house, they will gobble 'em all up in one sitting!

Ingredients
- Shredded ham (or chicken) slices
- 12 eggs
- 45g reduced fat cheese (HexA), grated
- Tomato chopped quite small
- 1 Onion chopped
- Low calorie cooking spray (Frylight)
Directions
- Spray a cupcake tray with frylight
- Crack an egg into each cake cavity. Dont worry about keeping the yolk in tact
- Embed the shredded ham into the egg
- Top with chopped onions, tomato and a sprinkle of cheese
- Bake on about 180 Degrees for 20-25 mins
This makes 12 little eggs, why not have 2-3 with salad for lunch, or as an inbetween lunch and dinner snack to keep you going! And remember what I said about keeping them away from the men. Mine are always getting nicked! :)
Tastiest Slimming World Burgers
Sometimes you just need a good ol' hearty burger. Luckily, this is yet another delicious food that can be enjoyed guilt and syn free. Here is my spin on the slimming world burger.

Ingredients
- 1/2lb lean mince (5% fat)
- Black Pepper
- Sea Salt
- 2 cloves garlic, crushed
- 1 Onion, chopped as finely as you can
- 1 tbsp of soy sauce or worcester sauce
Directions
- In a bowl, mix all ingredients listed except for your egg.
- Divide the mixture in two and using your hands, form two balls (hehehe) and then flatten into two patties.
- Fry for about 6 mins each side, less if you like your burger a little more rare
- Serve with a load of salad, slimming world chips and optionally, a 60g wholemeal roll (Healthy B)
