Baked Oats

 

Porridge. It's not very glamorous is it? But we can snazz it up. All we have to do is whack it in the oven with a few simple ingredients and you have the very respectable and distinguished sounding "baked oats" :)  It also doesn't hurt that it tastes great and keeps you full for hours! My recipe here will cost you 3.5 syns per serving, read on for details on keeping it syn free.

Recipe

Makes 4 servings

  • 1 banana (4 syns when cooked)
  • 1 teaspoon of baking powder (1/2 syn)
  • 1 teaspoon almond essence
  • 25g flaked almonds (7.5 syns)
  • 1 heaped teaspoon of brown sugar (2 syns)
  • 2 x Muller Light Yoghurts or syn-free yoghurt of choice
  • 1 egg
  • 70g Porridge Oats (2 x Healthy B)

Method: 

  1. Mix Muller lights/yoghurt, egg and almond essence in a bowl.  
  2. Add oats and baking soda and mix well.
  3. Spray an 8'' baking tray with frylight
  4. Slice one banana (or fruit of choice) and line the bottom of the tray
  5. Pour in the batter. Scatter almonds on top
  6. Bake on 180c/375F for 25 minutes
  7. After 25 mins, sprinkle the brown sugar on top, turn up the heat to 200c and broil for a further 3-5 mins to get a lovely carmelised topping

 

 

Keeping it syn free: 

Forego the sugar, almonds and baking soda. Add banana after cooking  for a syn-free alternative.

 

5 weird and wonderful Slimming World recipes

1. Rice pudding with diet cream soda

Cream soda has such a unique flavour, and I don't know what mad genius came up with this recipe for a syn free rice pudding... but it works! 

INGREDIENTS:

  • 3oz Pudding Rice
  • 500ml Diet / Sugar Free Cream Soda
  • 1 Mullerlight Yogurt
  • Drop of vanilla essence or another flavour of your choice
     

METHOD:

Put the rice and cream soda in a pan and bring to the boil | Reduce heat, add essence and simmer until liquid is absorbed | Allow to cool | Stir in mullerlight | Serve.

 

2. Slimming World KFC chicken made with Couscous

I heard about a KFC ex-employee who let the cat out of the bag regarding KFC's "secret recipe" for their chicken coating. You'd be right to think that couscous did not make the cut. However, the spice mix mentioned below is indeed part of that magic recipe, and the combination is a wonderful slimming world friendly alternative. 

INGREDIENTS:

  • 50g chicken pieces
  • 100g plain couscous
  • 1/4 tsp mustard powder
  • 1 tsp onion granules
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • 1 chicken stock cube
  • 1 medium egg
  • Fry light

METHOD:

Preheat oven to 200 Degrees | Add the mustard powder, cumin, cayenne pepper and chicken stock cube to the couscous and add enough boiling water to cover | cover with a plate | allow couscous to absorb the water | mix egg into the couscous mixture | Dip chicken pieces into the mixture | Spray a baking tray with frylight | place chicken pieces on tray | Pop into the oven and cook for 25-30 mins

3. Diet coke chicken

It's the last thing you can imagine pouring over your chicken, a big ol can of diet coke. However, once you taste the first mouthful, you'll know it won't be the last time making it! 

RECIPE:

  • 330ml can of diet coke
  • 350g diced chicken
  • Veg of your choice
  • 2 tbsp soy sauce
  • salt & pepper
  • 1 chopped onion
  • 1 clove of garlic, crushed
  • tbsp passata
  • 200ml chicken stock

METHOD:

spray pan with frylight | fry chicken, onion, garlic and veg for 5 mins | Add diet coke, stock, passata, garlic, soy sauce | Bring to the boile | Cover and simmer for 10-12 minutes

 

4. Chocolate mug cake

Whats not to love about this! at only two syns and under a minute to cook, its a perfect dessert.

  • 1 options belgian choc sachet
  • 1 egg
  • 2 tbsp sweetener

METHOD:

add the ingredients to a small mug | mix well | Microwave on high for 50 seconds | allow to cool and serve.

5. Fanta Sweet and sour chicken

  • 2-3 chicken breasts cut into strips
  • 330mls of fanta zero (or another diet fizzy orange)
  • 60g passata
  • 1 large sweet red pepper
  • 1 yellow pepper
  • 1 chopped onion

Fry onion, peppers and chicken using frylight for 5 minutes | add fanta and passata and bring to the boil | Allow to simmer for 10 minutes | serve with rice or salad
